Jaime Windon

Jaime Windon is the CEO & founder of LYON RUM, the flagship spirit of Windon Distilling Company, located on the Eastern Shore of Maryland. Jaime believes that there is a rum for all occasions, and loves sharing remarkable and innovative American rum with everyone she meets. LYON RUM is proud to be a small scale manufacturer, committed to producing 100% cane-to-glass spirits, distilled from American sugarcane in classic pot stills. Since 2012, her focus has been on developing and growing the distillery, as well as promoting the industry across the state and advocating for distillers nationwide. Jaime is a founding member of the Maryland Distillers Guild, serving a second term as president, and is a town commissioner in Saint Michaels — working to make the world a better place to live, work, and drink!
